What makes Lucas Pizza great?
1. Dough. A
lot of pizzerias claim to make dough fresh daily. So what!
Making dough daily doesnt make it good. Great tasting dough is a
symphony of delicate interactions between yeast, sugar and the right amount
of time, so all ingredients can blend - that is what makes my dough special!
2. Sauce. I
add over 8 different types of seasonings into each 15 gallon batch. The
seasonings are added at the right time during the simmering process. I
slow sweat the onions, garlic, carrots & celery in extra virgin olive
oil. Then I hand crush sweet, tender, ultra-premium quality plum tomatoes.
3. Cheese. Finally,
I pile on an abundant amount of premium Grande Mozzarella cheeses (you
won't find a richer tasting cheese anywhere) on all my pizzas.
And in the end, I just want to serve quality food and provide my customers
with an experience from my own family custom of good times with good food.
